Description

Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup cookie dough (safe-to-eat)
  • 1/2 cup unsalted butter (for buttercream)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Fill each cupcake liner halfway with the batter, then add a tablespoon of cookie dough in the center of each cupcake.
  8. Top with more batter until the liners are about 3/4 full.
  9. Bake for 15-18 minutes or until a toothpick comes out clean with a bit of melty chocolate.
  10. For buttercream, whip the softened butter until creamy, then gradually add powdered sugar and vanilla until smooth.
  11. Frost each cupcake with the cookie dough buttercream.

Notes

Serve warm for the best molten experience. Store leftover cupcakes in an airtight container for 1-2 days at room temperature or refrigerate for up to a week.
