Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Fill each cupcake liner halfway with the batter, then add a tablespoon of cookie dough in the center of each cupcake.
- Top with more batter until the liners are about 3/4 full.
- Bake for 15-18 minutes or until a toothpick comes out clean with a bit of melty chocolate.
- For buttercream, whip the softened butter until creamy, then gradually add powdered sugar and vanilla until smooth.
- Frost each cupcake with the cookie dough buttercream.
Notes
Serve warm for the best molten experience. Store leftover cupcakes in an airtight container for 1-2 days at room temperature or refrigerate for up to a week.
