Ingredients

  • 1 cup vanilla wafer crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 can cherry pie filling

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix together the vanilla wafer crumbs, sugar, and melted butter until well combined; press into the bottom of each cupcake liner.
  3. Beat the softened cream cheese until smooth; gradually add powdered sugar and vanilla extract until combined.
  4. Add eggs one at a time, mixing just until incorporated.
  5. Pour cream cheese mixture over the crusts in cupcake liners, filling about 2/3 full.
  6. Bake for 20-25 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature, then refrigerate for at least 2 hours.
  8. Top each cupcake with cherry pie filling just before serving.
