Description

Delicious and healthy muffins made with grated carrots and oats, perfect for breakfast or a snack.


Ingredients

  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup honey or maple syrup
  • 1/2 cup milk or almond milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated carrots, grated zucchini, rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the eggs, milk, honey or maple syrup, vegetable oil, and vanilla extract until well combined.
  4. Gradually combine the wet ingredients with the dry ingredients, stirring until just combined. Be careful not to overmix!
  5. Divide the batter equally among the muffin cups, filling each about two-thirds full.
  6. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let them cool for a few minutes before transferring them to a wire rack. Enjoy your healthy muffins!

These muffins can be stored in an airtight container at room temperature for a few days or refrigerated for longer freshness. They also freeze well.
