Description

Ingredients

  • 1 cup dates
  • 1 cup grated carrots
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped walnuts
  • Optional: 1/4 cup shredded coconut

Instructions

  1. Blend the dates in a food processor until they form a sticky paste.
  2. Add the grated carrots, rolled oats, almond flour, cinnamon, and nutmeg. Pulse until combined but slightly textured.
  3. Stir in the chopped walnuts and shredded coconut, if using.
  4. Roll the mixture into small balls, approximately 1 inch in diameter.
  5. Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
