- Optional: 1/4 cup shredded coconut
Instructions
- Blend the dates in a food processor until they form a sticky paste.
- Add the grated carrots, rolled oats, almond flour, cinnamon, and nutmeg. Pulse until combined but slightly textured.
- Stir in the chopped walnuts and shredded coconut, if using.
- Roll the mixture into small balls, approximately 1 inch in diameter.
- Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
