Description

Delicious and nutritious Carrot Cake Energy Balls that make a perfect snack for any time of the day.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup shredded carrot
  • 1/4 cup maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup raisins or chopped walnuts

Instructions

  1. In a mixing bowl, combine the rolled oats, almond flour, shredded carrot, maple syrup, almond butter, vanilla extract, and cinnamon. Mix well until all ingredients are combined. If the mixture seems too dry, add more maple syrup or nut butter until you reach a dough-like consistency.
  2. Fold in the raisins or chopped walnuts to add texture.
  3. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  5. Once chilled, enjoy your nutritious snack!
