Description

These Carrot Cake Bars are a delightful twist on traditional carrot cake, packed with moist goodness and rich flavors.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 2 large eggs (room temperature)
  • ½ cup vegetable oil or melted butter
  • 2 cups shredded carrots (about two medium carrots)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, ground cinnamon, nutmeg, and salt.
  3. Create a well in the middle of your dry mixture. Add the eggs and vegetable oil (or melted butter), then mix until smooth.
  4. Gently fold in the shredded carrots and nuts if using.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow the bars to cool completely in the pan before cutting into squares. Frost with cream cheese frosting if desired.

Notes

For added flavor, use fresh shredded carrots and ensure ingredients are at room temperature.
