Description
Carrot Cake Banana Bread blends moist banana bread with the warm spices and texture of carrot cake. Packed with ripe bananas, grated carrots, and cozy spices, this loaf is perfect for breakfast, snack, or dessert.
Ingredients
Dry Ingredients:
1 ½ cups flour (all-purpose or half whole wheat)
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ginger
Wet Ingredients:
2 large ripe bananas, mashed (about 1 cup)
2 large eggs (or flax eggs)
½ cup coconut sugar or brown sugar
¼ cup melted coconut oil or olive oil
1 tsp vanilla extract
1 ½ cups grated carrots (about 2 medium carrots)
Optional Mix-ins:
½ cup chopped walnuts or pecans
½ cup raisins
Optional Cream Cheese Glaze:
4 oz cream cheese, softened
2 tbsp powdered sugar
1 tsp vanilla extract
1–2 tbsp milk (to thin)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
3. In a large bowl, mash bananas until smooth. Whisk in eggs, sugar, oil, and vanilla until well combined.
4. Add dry ingredients to wet mixture and stir gently until combined.
5. Fold in grated carrots, and nuts/raisins if using.
6. Pour batter into prepared pan and bake 50–60 minutes, or until a toothpick inserted comes out clean.
7. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
8. Optional: Beat cream cheese, powdered sugar, vanilla, and milk until smooth. Drizzle over cooled loaf.
Notes
- Use very ripe bananas for maximum sweetness.
- Grate carrots finely for best texture.
- Don’t overmix the batter to keep the loaf tender.
