Description

Ingredients

  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup grated apple (about 1 large apple)
  • 1 cup grated zucchini (about 1 small zucchini)
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, beat the eggs with the sugar until well combined. Add the vegetable oil and vanilla extract, mixing until smooth.
  3. Fold in the grated carrots, apple, and zucchini into the wet mixture until evenly distributed.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. If you’re feeling adventurous, fold in the chopped walnuts or pecans and raisins until evenly incorporated.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the bread from the oven and let it cool in the pan for about 10 minutes. Transfer it to a wire rack to cool completely before slicing and serving.
