- 1 cup brown sugar
- 1/2 cup honey
- 1 cup cream
- 1 cup toasted shredded coconut
- 2 cups oats
Instructions
- In a medium saucepan, combine the brown sugar, honey, and cream. Cook this mixture over medium heat until it comes to a full boil, stirring constantly.
- Once boiling, allow it to cook for 1-2 minutes without stirring.
- Remove the saucepan from the heat and stir in the toasted shredded coconut and oats until well combined.
- Drop spoonfuls of the mixture onto a lined baking sheet.
- Refrigerate the baking sheet for about 30 minutes to allow the cookies to set.
