Description

Fun and festive cookie bars featuring buttery sugar cookies topped with creamy frosting and candy corn, perfect for autumn celebrations.


Ingredients

  • 1 Cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 2 Cups sugar
  • 2 large eggs + 1 egg white
  • 2 teaspoons vanilla extract
  • 2 ½ Cups unbleached flour
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 Cup Candy Corn
  • 1 Cup unsalted butter (softened, for frosting)
  • 2 Cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a 9×13 baking dish with parchment paper and spray lightly with cooking spray.
  3. In a large bowl, beat together the softened butter and cream cheese until smooth.
  4. Gradually add in sugar, mixing well.
  5. Beat in the eggs and vanilla extract until fully combined.
  6. Add the flour, baking powder, and salt, mixing until a dough forms.
  7. Gently fold in the candy corn.
  8. Pour the cookie batter into the prepared pan and spread evenly. Bake for 30 to 35 minutes or until the edges are lightly browned.
  9. Let the bars cool completely in the pan.
  10. In a separate bowl, mix together the softened butter, powdered sugar, vanilla extract, and salt until smooth.
  11. Once cooled, frost the bars evenly with the frosting.
  12. Sprinkle extra candy corn on top before cutting into squares or bars.
