Ingredients

  • 21/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon fine sea salt
  • 1 cup unsalted butter, cold and cubed
  • 3/4 cup ice-cold water
  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 cup pure maple syrup
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Make the Dough: Start by pulsing flour, sugar, and salt together in a food processor. Add the cold butter and pulse about 5-8 times until the mixture resembles pea-sized crumbs.
  2. Combine: Gradually stream in the ice-cold water and pulse just until the dough begins to clump together. Be careful not to overmix.
  3. Chill: Divide the dough into two pieces and wrap them in plastic wrap. Shape each piece into a disc and refrigerate for at least one hour.
  4. Roll Out: Once chilled, roll out the dough on a lightly floured surface to about 1/8-inch thickness. Use a 4-inch round cutter to create circles.
  5. Prepare Muffin Pan: Press the dough circles into a greased muffin pan. Chill the pastry shells while making the filling.
  6. Preheat Oven: Preheat your oven to 350°F (175°C).
  7. Make the Filling: In a bowl, cream the room temperature butter and brown sugar together. Whisk in the eggs one at a time. Add in the maple syrup, salt, and vanilla.
  8. Fill and Bake: Let the filling sit for 10 minutes, whisk again, and pour into the prepared pastry shells. Bake for about 25 minutes, or until the pastry is golden brown and the filling is set but jiggly.
  9. Cool: Allow them to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
