Description

Rich, indulgent bars with buttery richness and tropical coconut flavor, easy to whip up and perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, cream together the softened butter and granulated sugar until smooth. Add the vanilla extract and mix well.
  3. Gradually add the flour and salt, mixing until just combined.
  4. Press the mixture evenly into the bottom of the prepared baking dish.
  5. Bake for 20-25 minutes, or until the edges start to turn golden brown.
  6. Remove from the oven and immediately sprinkle the shredded coconut on top.
  7. Bake for an additional 10-15 minutes, until the coconut is golden.
  8. Allow to cool, then dust with powdered sugar before cutting into bars. Serve and enjoy!

Notes

Bars can be served plain, with ice cream, topped with fresh fruit, or alongside coffee or tea. Store in an airtight container.
