Description

Ingredients

  • 1 cup Unsalted Butter, melted and cooled
  • 1/2 cup Granulated Sugar
  • 1 cup Light Brown Sugar, packed
  • 2 Large Eggs
  • 1.5 teaspoons Vanilla Extract
  • 2.5 cups All-Purpose Flour
  • 1 teaspoon Cinnamon Powder
  • 1 teaspoon Cornstarch
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1.5 cups Toasted Pecans, roughly chopped
  • 1/2 cup Toffee Bits

Instructions

  1. Cream together the melted (but cooled) butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add in the eggs and vanilla extract, whisking until smooth.
  3. Fold in the flour, cinnamon, cornstarch, baking soda, and baking powder until just combined.
  4. Incorporate the chopped pecans and toffee bits evenly throughout the dough.
  5. Chill the dough in the refrigerator for 30-45 minutes.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop small portions of dough and roll them into balls.
  8. Optionally, roll the balls in granulated sugar for added crunch.
  9. Space the balls 2 inches apart on the tray and bake for 11-14 minutes until golden.
  10. Allow the cookies to cool on the tray before transferring them to a cooling rack.
