Description

A sweet and healthy frozen snack made with creamy Greek yogurt and a delicious blueberry compote.


Ingredients

  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine the blueberries, honey, and lemon juice over medium heat. Allow the mixture to simmer for about five minutes until the blueberries soften and release their juices.
  2. Thicken the Mixture (Optional): If you’re looking for a thicker compote, dissolve the cornstarch in a small amount of water and stir it into the blueberry mixture. This will give you a wonderful texture and help it hold together better. Remove from the heat and let it cool completely.
  3. Mix the Yogurt: In a bowl, mix the Greek yogurt and vanilla extract until smooth. If you’d like your yogurt a bit sweeter, you can adjust by adding more honey or maple syrup to taste.
  4. Fill the Molds: Next, spoon the yogurt mixture into silicone molds or mini muffin tins, filling each mold about three-quarters full.
  5. Add the Blueberry Swirl: Top each yogurt portion with a spoonful of the cooled blueberry compote. Use a toothpick to gently swirl the compote into the yogurt, creating a fun marbled effect.
  6. Freeze: Place the filled molds in the freezer and let them freeze for at least three hours or until solid.
  7. Serve and Enjoy: To remove the frozen yogurt bites from the molds, let them sit at room temperature for 2-3 minutes before popping them out. Now they’re ready for you to enjoy—no baking required!

Notes

Store in an airtight container in the freezer for up to two months. Let sit at room temperature for a couple of minutes before serving.
