- ½ cup butter (softened)
- 1 cup sugar (granulated)
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- 4 cups blueberries (fresh or frozen)
- 2 tablespoons flour (for the blueberry mixture)
- 2 tablespoons sugar (for the blueberry mixture)
Instructions
- Preheat your oven to 375°F.
- In a large bowl, toss together 4 cups of blueberries, 2 tablespoons of flour, and 2 tablespoons of sugar until well-coated.
- Transfer the blueberry mixture into a buttered 8 by 8-inch baking dish, spreading it out evenly.
- In a separate bowl, cream 1 cup of flour, ½ cup of butter, 1 cup of sugar, ½ teaspoon of salt, and ½ teaspoon of baking powder using a pastry blender until crumbly. Blend in ½ teaspoon of vanilla extract.
- Sprinkle the crumbled topping evenly over the blueberry mixture. Place the baking dish in the oven and bake for 45 to 55 minutes until the topping turns golden brown.
- Once baked, transfer the blueberry crisp to a wire rack and let it cool for about 30 minutes before serving.
