Ingredients

  • 1 cup sifted flour
  • ½ cup butter (softened)
  • 1 cup sugar (granulated)
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 4 cups blueberries (fresh or frozen)
  • 2 tablespoons flour (for the blueberry mixture)
  • 2 tablespoons sugar (for the blueberry mixture)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, toss together 4 cups of blueberries, 2 tablespoons of flour, and 2 tablespoons of sugar until well-coated.
  3. Transfer the blueberry mixture into a buttered 8 by 8-inch baking dish, spreading it out evenly.
  4. In a separate bowl, cream 1 cup of flour, ½ cup of butter, 1 cup of sugar, ½ teaspoon of salt, and ½ teaspoon of baking powder using a pastry blender until crumbly. Blend in ½ teaspoon of vanilla extract.
  5. Sprinkle the crumbled topping evenly over the blueberry mixture. Place the baking dish in the oven and bake for 45 to 55 minutes until the topping turns golden brown.
  6. Once baked, transfer the blueberry crisp to a wire rack and let it cool for about 30 minutes before serving.
