- 1 teaspoon vanilla extract
- 1 large egg
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 large egg (for cream cheese filling)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with cupcake liners.
- In a bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together.
- In another bowl, whisk milk, vegetable oil, vanilla extract, and a large egg until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth, then add the other large egg and mix until incorporated.
- Fill cupcake liners halfway with chocolate batter, then add a spoonful of cream cheese mixture on top.
- Optionally, sprinkle chocolate chips on top of the cream cheese filling.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cupcakes in the tin for a few minutes before transferring them to a wire rack.
