Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup Biscoff cookie butter
  • 1/4 cup granulated sugar
  • 3/4 cup light brown sugar (packed)
  • 1 egg + 1 egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 ounces white chocolate (chopped, plus more for drizzling)
  • 6 Biscoff cookies (crushed)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a stand mixer, combine the unsalted butter and Biscoff cookie butter. Beat on medium speed for 1-2 minutes until well combined.
  3. Add granulated sugar and brown sugar, continuing to beat on medium-high speed for 2-3 minutes until light and fluffy.
  4. Incorporate the egg and egg yolk, along with vanilla extract. Beat until creamy.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the dough until just combined.
  6. Fold in chopped white chocolate. The dough will be slightly sticky.
  7. Using a medium cookie scoop, drop dough onto prepared baking sheets, spacing 2-3 inches apart.
  8. Bake for 8-10 minutes or until edges are lightly golden. Allow cooling for 5-10 minutes before transferring to a wire rack.
  9. Drizzle melted white chocolate over cooled cookies and sprinkle with crushed Biscoff cookies.

Notes

Store cookies in an airtight container; they last about a week at room temperature. Freeze in a freezer-safe container for up to three months.
