- 1/2 cup unsalted butter (room temperature)
- 3/4 cup Biscoff cookie butter
- 1/4 cup granulated sugar
- 3/4 cup light brown sugar (packed)
- 1 egg + 1 egg yolk (room temperature)
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 ounces white chocolate (chopped, plus more for drizzling)
- 6 Biscoff cookies (crushed)
Instructions
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a stand mixer, combine the unsalted butter and Biscoff cookie butter. Beat on medium speed for 1-2 minutes until well combined.
- Add granulated sugar and brown sugar, continuing to beat on medium-high speed for 2-3 minutes until light and fluffy.
- Incorporate the egg and egg yolk, along with vanilla extract. Beat until creamy.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the dough until just combined.
- Fold in chopped white chocolate. The dough will be slightly sticky.
- Using a medium cookie scoop, drop dough onto prepared baking sheets, spacing 2-3 inches apart.
- Bake for 8-10 minutes or until edges are lightly golden. Allow cooling for 5-10 minutes before transferring to a wire rack.
- Drizzle melted white chocolate over cooled cookies and sprinkle with crushed Biscoff cookies.
Notes
Store cookies in an airtight container; they last about a week at room temperature. Freeze in a freezer-safe container for up to three months.
