Description

A moist and tender cake infused with the rich flavors of Biscoff cookies, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Biscoff cookie butter
  • Biscoff cookies, for layering and decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing thoroughly after each addition, then stir in the vanilla extract and Biscoff cookie butter.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk, until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  9. For the frosting, beat together more Biscoff cookie butter with softened butter and powdered sugar until smooth.
  10. Layer the cooled cakes with Biscoff frosting and additional Biscoff cookies, if desired.
  11. Decorate the top with extra Biscoff cookies before serving.

Notes

For an extra touch, serve with whipped cream or vanilla ice cream.
