- 1 cup buttermilk

- 1 cup Biscoff cookie butter
- Biscoff cookies, for layering and decoration
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing thoroughly after each addition, then stir in the vanilla extract and Biscoff cookie butter.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk, until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- For the frosting, beat together more Biscoff cookie butter with softened butter and powdered sugar until smooth.
- Layer the cooled cakes with Biscoff frosting and additional Biscoff cookies, if desired.
- Decorate the top with extra Biscoff cookies before serving.
Notes
For an extra touch, serve with whipped cream or vanilla ice cream.
