- 2 ripe bananas
- 1 cup quick-cook oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar (packed)
- 1 large egg
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Mash the bananas in a bowl.
- Stir in the egg, brown sugar, and vanilla until mixed.
- Add the flour, oats, baking soda, salt, and cinnamon (if using) and mix until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of dough on a lined cookie sheet.
- Bake at 350°F for about 12 minutes until edges are golden.
- Allow to cool and enjoy warm or at room temperature.
Notes
Use very ripe bananas for the best flavor. Can be stored at room temperature for 2-3 days or frozen for up to 2 months.
