Description

Chewy and satisfying banana oatmeal chip cookies made with simple ingredients for a quick treat.


Ingredients

  • 2 ripe bananas
  • 1 cup quick-cook oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar (packed)
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Mash the bananas in a bowl.
  2. Stir in the egg, brown sugar, and vanilla until mixed.
  3. Add the flour, oats, baking soda, salt, and cinnamon (if using) and mix until just combined.
  4. Fold in the chocolate chips.
  5. Drop spoonfuls of dough on a lined cookie sheet.
  6. Bake at 350°F for about 12 minutes until edges are golden.
  7. Allow to cool and enjoy warm or at room temperature.

Notes

Use very ripe bananas for the best flavor. Can be stored at room temperature for 2-3 days or frozen for up to 2 months.
