Description

Delightful muffins combining sweet bananas and rich chocolate, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a large bowl until smooth and creamy.
  3. Add Greek yogurt, honey, sugar, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in chocolate chips.
  7. Divide batter evenly into prepared muffin tin, filling each cup about three-quarters full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm with butter or jam. Store in an airtight container for up to three days or freeze for three months.
