Description

Delicious, guilt-free muffins made with Greek yogurt, fresh apples, and warm cinnamon flavors. Perfect for breakfast or a snack!


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/2 cup applesauce
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the Greek yogurt, sugar, applesauce, and egg until smooth.
  4. Pour the wet ingredients into the dry mixture and gently fold until just combined.
  5. Fold in the diced apples.
  6. Pour the batter into greased muffin tins or use paper liners.
  7. Bake for 20-25 minutes until golden brown, and a toothpick comes out clean.
  8. Cool in the tins for a few minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, serve with Greek yogurt or a sprinkle of cinnamon sugar.
