Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1 large egg
  • 1 cup unsulfured molasses
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  3. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, then stir in molasses, milk, and vanilla until just mixed.
  5. Gradually add dry ingredients to wet ingredients, mixing until combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55–65 minutes or until a skewer inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. For the glaze, whisk together powdered sugar, 2 tablespoons milk, and vanilla until drizzling consistency is reached.
  10. Once cooled, drizzle the glaze over the loaf.

Notes

Perfect to serve with hot beverages like coffee, tea, or spiced cider. Keep wrapped at room temperature for 3-4 days or refrigerate for up to a week.
