- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed dark brown sugar
- 1 large egg
- 1 cup unsulfured molasses
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, then stir in molasses, milk, and vanilla until just mixed.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Pour the batter into the prepared loaf pan.
- Bake for 55–65 minutes or until a skewer inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, whisk together powdered sugar, 2 tablespoons milk, and vanilla until drizzling consistency is reached.
- Once cooled, drizzle the glaze over the loaf.
Notes
Perfect to serve with hot beverages like coffee, tea, or spiced cider. Keep wrapped at room temperature for 3-4 days or refrigerate for up to a week.
