Description

Ingredients

  • 1 tablespoon orange zest
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons fresh orange juice

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the beaten egg, milk, and melted butter.
  4. Pour the wet ingredients into the dry mixture, stirring until just combined.
  5. Gently fold in cranberries and orange zest.
  6. Divide the batter among the muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes until the tops are golden brown and a toothpick comes out clean.
  8. Prepare the glaze by whisking together powdered sugar and orange juice until smooth.
  9. Drizzle the glaze over the warm muffins.
  10. Serve warm or at room temperature.
