Description

Soft and chewy cookies made with almond flour and dried cherries, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped dried cherries
  • 1/2 cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add in the egg, almond extract, and vanilla extract, and mix until well combined.
  4. In another bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the chopped cherries and sliced almonds until evenly distributed.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough for 30 minutes before baking. Feel free to adjust cherries and almonds based on preference.
