- 3 very ripe bananas
- 1/4 cup smooth natural peanut butter
- 1 teaspoon vanilla extract
- 1 1/4 cup instant or quick cooking oats
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- Mash the bananas in a large bowl until almost smooth.
- Add peanut butter and vanilla extract; mix until combined.
- Add oats, salt, and baking powder and stir until well combined.
- Fold in 1/3 cup of chocolate chips; hold the rest for later.
- Pour mixture into the loaf pan and sprinkle remaining chocolate chips on top.
- Bake for 25-30 minutes or until a knife comes out clean.
- Let cool before cutting into 6-8 pieces.

Experiment with different nut butters or add-ins like chopped nuts or dried fruits for variety.
