- 1 package (8.8 ounces) Biscoff cookies
- 1/2 cup crushed graham crackers (about half a sleeve)
- 8 tablespoons unsalted butter (melted)
- 6 egg yolks (at room temperature)
- 1 can (14 ounces) sweetened condensed milk
- 2/3 cup key lime juice (or juice from four large limes)
- 2 teaspoons key lime zest
- A pinch of salt
- 4 ounces mascarpone cheese
- 1/3 cup powdered sugar
- 1 1/4 cups heavy cream
- Lime zest (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
- In a mixing bowl, combine the crushed Biscoff cookies and graham crackers. Pour in the melted butter, mixing until everything is moistened. Press the mixture firmly into the bottom of your prepared dish.
- In another bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, key lime zest, and a pinch of salt until fully combined.
- Pour the filling over the crust in the baking dish and bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- In a large bowl, beat the mascarpone cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture until combined.
- Once the bars have cooled down, spread the mascarpone whip over the top. Refrigerate for at least two hours (or until firm). Then slice into squares and garnish with extra lime zest before serving!
Notes
Store leftovers in an airtight container in the refrigerator for up to five days. Keep the mascarpone whip fresh by topping just before serving.
