- 1 cup pumpkin puree
- 1 cup almond flour (or any gluten-free flour of your choice)
- ½ cup maple syrup (or honey, if preferred)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the pumpkin puree, almond flour, and maple syrup. Mix until you have a smooth dough.
- Scoop out small portions of the dough and roll them into balls. Place them onto the prepared baking sheet, leaving space between each.
- Bake for about 15-20 minutes until firm to the touch and a toothpick comes out clean.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Serve warm or at room temperature, drizzled with extra maple syrup or sprinkled with cinnamon. Store in an airtight container in the fridge for up to a week.
